These are small, fancy sandwiches generally made from light, delicate ingredients and bread that has been trimmed of crusts. They are often cut into fancy shapes. Fillings and spreads can be the same as those for canapés.
Ingredients:
- 2 slices wheat bread
- 1 Tbsp mashed potato
- 1 Tbsp diced egg
- 3 Tbsp mayonnaise
- Salt and pepper to taste
Procedure:
- In a bowl, mix together the mashed potato, diced eggs and mayonnaise.
- Season with salt and pepper.
- Spread the mixture on one slice of wheat bread them top with the other.
- Cut off the crust then cut the sandwich at the center to produce four square slices.
- Garnish then serve.
