Equipment: Mixing bowl, rubber spatula, laboratory uniform, chefs knife, cleaning materials.
Mise en Place:
- Wash, rines and sanitize shallots, chives and lemons
- Chop shallots and chives finely
- Wash, rinse ad cut tuna fillet into approx 1/2 cm cubes
- Squeeze lemon for juice.
Method:
- Mix Tuna with all liquid ingredients.
- Add shallots, chives, capers, and salt
- Mix well
