Ingredients
5 slices french baguette
2 – 3 pcs. salad tomato
15 g red onion
4 pcs. olives, sliced into cheeks
A pinch of cracked pepper
A pinch of salt
10 pcs. medium sized fresh basil leaves
25 ml olive oil
5 – 10 ml balsamic vinegar
1 pc. clove of garlic, crushed
Procedure:
- Cut 5 slices of ½ inch thick baguette. Place it in pan and toast each side for a minute over medium heat and brush the bread with olive oil.
- Finely dice the tomatoes and red onion. Then chop 5 basil leaves and slice the olives.
- In a bowl, place all the ingredients, except for the 5 basil leaves. Mix well.
- Leave aside for at least 15 minutes in a room temperature to absorb flavors.
- Deep fry 5 basil leaves for a minute per side until golden brown.
- To serve, place the grilled bread on a plate, top with the tomato mix and garnish with fried basil leaves.
