Ingredients:
1 medium cucumber, thinly sliced
1 medium red onion, diced
½ cup white vinegar
1/8 cup vegetable oil
½ cup water
1/8 cup sugar
4 cherry tomato, cut into halves
sprig dill for garnish
Procedure:
- Wash the cucumber and drain it in a colander.
- Cut both ends of the cucumber using a knife. Cut the cucumber thinly using a vegetable shredder. Then dice the red onion.
- In a bowl, combine the vinegar, water, vegetable oil and sugar. Mix it well until sugar has dissolved. Set aside.
- Layer cucumber in a rectangular bowl and top it with onion.
- Pour the mixture in the layered cucumber. Taste and adjust sugar for sweetness, adding more sugar if needed.
- Cover and chill for 2 -4 hours before serving.
- Lay out 3 cucumber slices in a plate and roll it. Pin it using a bamboo skewer to put the cucumber in place and stick the half sliced cherry tomato to the pointed end of the skewer.
- Add diced onion, sprig dill and a tablespoon of prepared vinaigrette dressing for garnish. Serve
