Although I don't normally love fall, I have decided to lean into it this year. I have been enjoying the cool weather, the leaves changing color, warmer clothes, and especially the food. I love all the fall flavors. Cinnamon, apple, chai, maple, pumpkin, and so many more. So because this is a fall issue I decided to try and incorporate fall flavors into this bake, and I came up with Pumpkin Cakepops. A pumpkin cake filling and a chocolate outer shell dyed orange to go with the fall theme; these are the perfect fall desserts.

Ingredients-
Pumpkin cake
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
2 teaspoons pumpkin pie spice
1 cup vegetable oil
4 eggs
1 cup brown sugar
1/2 cup sugar
1 (15 ounce) can pumpkin puree
1 ½ teaspoons vanilla extract
Cream Cheese Frosting
8 ounces cream cheese
1/2 cup butter
3 cups powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
Chocolate Coating
Candy melts
Cake Pop Sticks
Instructions
Preheat the oven to 350 degrees.
Sift all the dry ingredients together.
Mix all the wet ingredients together.
Combine the wet and dry ingredients together and mix well until fully combined.
Bake for 30-35 minutes or until the toothpick comes out clean.
After taking the cakes out, immediately dump the cakes into a bowl.
Mash the cake, and add frosting until the mixture is almost dough like or able to be formed into a ball.
Once you have reached your desired consistency use the cake mixture to form small to medium sized balls.
Melt some of the candy melts and use it to dip the end of the cake pop sticks into. Then push the cake pop sticks into the cake balls.
Once all the cake pops have sticks, place them in the freezer and let them in there until they are frozen.
Once they are frozen, melt some more candy melts, and use the melted chocolate to dip the cake pops into it and fully cover the cake pops.
Lastly let the cake pops sit in the freezer or fridge until the chocolate covering has hardened.
