Mariclare Bakes: Christmas Edition

Finally, it's Christmas time. My saying is: “If it's going to be cold, it might as well be Christmas.” I mean, what isn’t there to like about Christmas? Snow, Christmas music (self-explanatory), beautiful decorations, gifts, and Christmas desserts (some next-level stuff). There are cookies, cakes, brownies, and…pie. Pie is a classic dessert. It's simple, but when done right, it is amazing–and this pie recipe is done right. It has the perfect balance of sweet and tart. The crust is phenomenal. It’s perfect to make for the holidays to share with your loved ones.


Recipe

Pie Crust-

  • 2 ¼ cup Flour

  • 1 tsp Salt

  • 2 tsp Sugar

  • 16 tbsp Salted Butter

  • ⅔ cup Ice Water

Pie Filling-

  • 12 oz Frozen or Fresh Cherries

  • 12 oz Frozen or Fresh Black Berries

  • Juice of One Orange

  • Zest of ½ Orange

  • 1 ¼ cup Sugar

  • ¼ cup Flour

  • 1 tsp Salt

  • ½ tsp Cinnamon


Directions

Pie Crust-

  1. Sift the flour, salt, and sugar together into a large bowl.

  2. Put out water into the freezer to become cold.

  3. Dice up the butter into medium sized chunks and then add to the flour mixture.

  4. Slowly work the butter into the flour until combined and crumbly.

  5. Then add in the water and mix. Do not overwork the dough or it will become tough.

  6. Roll the dough until desired thickness and size.

  7. Put the rolled out dough into your desired tin and use a fork to poke hole in the bottom.

  8. Roll out your excess dough and cut out christmas trees with a christmas tree cookie cutter. This will be laid on top of the pie once filled with berries.

Pie Filling-

  1. Preheat the oven to 450 degrees fahrenheit.

  2. Combine the fruit and orange juice and zest into a large bowl.

  3. Then add in the sugar, flour, salt, and cinnamon. Mix.

  4. Put the berry mixture into the pie.

  5. Cook for 15 minutes, then cover the edges of the crust and cook for another 30-35 minutes.

Fatima Mohamed: 10/10. It's actually a 10, because the crust is really good, it's not soggy or burnt, and the flavors make sense together. It tastes like something for a bakery.

Sarah Su: 8.5/10: I like the orange flavor because it offsets the sweetness and creates a good balance of flavors. It just needs a little thicker crust.

Will O’Gorman: 9/10 is not too sweet, but it tastes really good. The flavors go really well together.

Bess Chamley: 8.5/10 I don’t normally like pie but this is pretty good. The cherry and blackberry go well together, but for someone who doesn't like oranges it would be a little jarring.
