Shiny Icing

Made in Cindy's Kitchen, "Just North of Wiarton & South of the Checkerboard"
Recipe Source:  Masterson Family Reunion 2005 Cookbook ~ Auntie Gladys

3 heaping Tbsp. Cornstarch
1/3 cup Cocoa 
1 cup White Sugar
1 cup boiling water
1 Tbsp. butter or margerine
1 Tsp. vanilla

/Sift Cornstarch, Cocoa & Sugar together;  gradually add boiled water while mixing.  Cook over medium heat in non-stick saucepan or double boiler, stirring constantly until desired consistency.  Remove from heat, stirring in Vanilla and Butter.  Should icing appear lumpy, continue stirring briskly and lumps will dissolve.  Cool slightly prior to icing cake.  Covers 1 Bundt Cake.
