Crust:
1 1/4 cup graham crumbs
2 Tbsp. sugar
1/8 Tsp. ground ginger
1/4 cup butter or margerine, melted
Mix crumbs, sugar, and ginger; add melted butter. Press into 9" pie plate. Set aside.
Filling:
1 - 250 g (8 oz) pkg of Cream Cheese (I used "light")
3/4 cup packed brown sugar
3 eggs, beaten
1 - 14 oz can solid packed pumpkin puree
1/2 cup heavy whipping cream (35%)
1 tsp. Pumpkin Pie Spice
1/2 tsp. Salt
In a large mixing bowl combine cream cheese and brown sugar; beat until smooth, then add eggs, pumpkin, and cream. Mix well. Stir in Pumpkin Spice and salt. Pour into pie shell.
Bake in preheated 350* F Oven for 35 to 40 minutes, or until set in center. Chill before serving. Garnish with whipped cream if desired.
