Carrot Cake

Made in Cindy's Kitchen, "Just North of Wiarton & South of the Recipe"

2 cup all-purpose flour

1 1/2 tsp. baking soda

2 tsp. baking powder

Pinch salt

1 1/2 tsp. cinnamon

2 cup white sugar

1 cup oil

1/2 cup pineapple juice

3 eggs

8 oz drained, crushed pineapple

2 cup grated carrots

1/2 cup crushed walnuts or pecans

Sift flour, soda, baking powder, salt, cinnamon and sugar all together.  Make a hole in dry ingredients and add oil, pineapple juice, and unbeaten eggs.  Mix, then add the crushed pineapple, carrots and walnuts.  Mix well and bake at 350* F for approx. 40 minutes.  Test with toothpick to see if done.

Icing:

8 oz Philadelphia Cream Cheese

2 tsp. Vanilla

1 lb. icing sugar (2 cups)

1/2 cup butter

Mix ingredients until smooth.  This cake NEEDS this special icing.
