Apple Cinnamon Chip Muffins

Made in Cindy's Kitchen, "Just North of Wiarton & South of the Checkerboard"
Recipe adapted from Muffin Mania's Apple Cinnamon Muffins

1/2 cup margarine
3/4 cup white sugar
1 egg beaten
1 cup buttermilk
1 tsp. salt
1 1/2 cup diced apples
1 cup flour
3/4 cup whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 cup cinnamon chips

Topping:
1 tsp. cinnamon
2 tbsp. white sugar

Blend butter, sugar and egg until smooth
Add buttermilk, salt, apples and mix well.
Stir together flour, baking soda, cinnamon and cinnamon chips; adding wet to dry ingredients, stirring only to moisten.

Divide into well greased muffin tins; sprinkle with topping prior to baking.

Bake at 375*F for 20 minutes; Yields ~ 10 large muffins

Cindy's NOTE:  Double Recipe to make 1 Dozen Mammoth Muffins, baked in 325*F Convection Oven for 45 minutes.
