Buttermilk Banana Bread

NOTE: Decrease Sugar to 1 cup; increase Bananas to 1 1/2 cups makes this recipe just as moist & flavourable.  Also when making muffins, bake for 35 minutes (variable with ovens, or when toothpick inserted comes out dry.

1/2 cup margarine or butter, softened
1 1/2 cups sugar
2 eggs
1 cup mashed bananas (3 avg. size)
4 tbsp buttermilk
1/2 tsp vanilla
1 3/4 c. flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda

Grease & flour pan(s) or muffin tins (I used muffin liners), once Oven has been set to preheat at 350*F.

In large bowl cream butter & sugar; add eggs, bananas, buttermilk & vanilla until batter is well mixed. Mix together dry ingredients and blend into the wet. Mix until well combined. Divide batter into greased & floured pan(s) and bake at 350*F for 50-55 minutes or until toothpick inserted comes out clean. Muffins will take less time. Times vary with oven temps.
