HUMMINGBIRD CAKE ~ Made in Cindy's Kitchen, "Just North of Wiarton & South of the Checkerboard".
3½ c. flour
1 t. baking soda
1½ t. cinnamon
1½ c. sugar
1 c. vegetable oil
8 oz. crushed pineapple, undrained
1 t. salt
3 eggs, beaten
1½ t. vanilla
2 c. crushed bananas
1 c. nuts
Frosting:
8 oz. cream cheese
1/2 c. butter
3-4 c. powdered sugar
In a bowl, combine flour, soda, and cinnamon. Cream together oil, sugar, and vanilla. Beat until fluffy. Add eggs. Blend in dry ingredients. Add remaining ingredients and mix well. Pour into a greased 9×13 baking pan. Bake at 350° F. for 25-30 minutes; cool. For frosting, cream together cream cheese and butter. Add powdered sugar to reach desired consistency.
