Rhubarb Muffins (Winnie's)
Made in Cindy's Kitchen "Just North of Wiarton & South of the Checkerboard".

1 1/4 c. all purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. white sugar
1/4 c. brown sugar
1 large egg
1/2 cup milk
1/4 c. canola oil
1 tsp. almond flavouring
1 1/2 c. diced rhubarb
Mix dry ingredients. Beat egg, add milk, oil and almond flavouring. Pour egg mixture over dry ingredients and stir to moisten. Fold in rhubarb. Sprinkle tops with sugar before baking..
Bake at 375*F for 20 minutes
Yields: 8 large muffins
Peaches or other fruit in Season are just as delicious.
