Made in Cindy's Kitchen ~ Just North of Wiarton & South of the Checkerboard (Recipe adapted from another lady's share on a recipe group)
Yields 3 ~ 8"x 3 7/8" x 2 15/32" Foil Pans
Ingredients:
3 cups flour
1 1/2 - 1 3/4 cups sugar (I put 1 3/4 as some like their breads a little sweeter then I do, where I am fine with the 1 1/2 cup)
1 tsp baking soda
1 tsp. Cinnamon (heaping tsp.)
1 cup chopped nuts, walnuts or pecans
2 tsp. vanilla
3 eggs, beaten
1 1/4 cup vegetable oil
2 cups mashed bananas
1 - 19 oz. can crushed pineapple, well drained
Preparation:
Combine in large bowl flour, sugar, baking soda and cinnamon; then stir in nuts. Set aside.
Mix remainder of ingredients, adding to dry and stirring until just moist. Divide batter between the 3 greased and floured pans. Bake at 350*F for approximately 1 hour and 15 minutes, checking center of loaf with toothpick or cake tester if it comes out clean.
Cool completely before removing from pan.
