Chicken & Rice

Made in Cindy's Kitchen, "Just North of Wiarton & South of the Checkerboard".  Recipe adapted from The Masterson Family Cookbook 2005, Recipe Submitted by Gladys Eby

3 lbs of Chicken cut up or breasts

1 1/2 cup of Basmati Rice (rinsed well)

1 pkg. (envelope) of dry onion soup mix

1 can cream of mushroom soup

2 cups of boiling water

salt, pepper, butter, paprika

Mix soups, rice and water together; put in greased casserole (I use a small roaster).  Dot each piece of chicken with butter and sprinkle with salt, pepper and paprika.  Cover and bake in 350*F oven for 1 1/2 hours.
