Employees must wash hands and put gloves on prior to working on any prep items.
You may combine sauces as long as they are from the same batch, share the same shelf life, and are stored appropriately according to the Sauce Shelf Life Chart throughout the process.
Storing used bottles
As sauces are used during service, store the nearly empty bottles together in a pan placed in the cold table cooler.
Bottle lids vary based on the sauce in the bottle.

Consolidate Bottles
Consolidate bottles of sauce by type and batch, as shown above.
The Set Up
Remove the lid from the bottle containing the most sauce.
Stacking
Remove the bottom from the other bottle you wish to combine and place it on top of the first bottle as shown above.
Scraping
Remove the lid and use a bottle spatula to scrape out as much remaining sauce as you can into the bottom bottle.
Return to Use
Make sure to secure the lid tightly, then return the full bottle to the front line, to be used as soon as possible.
