The purpose of the Hot Box is to keep hot food hot at appropriate temperatures for serving.
The temperature of the hot box should be set so that the interior temperature is 155-165°F.
The Hot Box should have an oven thermometer placed on a shelf near the middle of the unit.
Make sure to label each shelf of the Hot Box to show where each item is stored.
Follow FIFO when loading products into the Hot Box. Put the freshest items in back, following proper rotation.
