3 bags Avocado
2 & 1/2 tbsp Kosher Salt
2 tbsp Garlic Powder
1 cup Diced Red Onion
1/2 cup Chopped Cilantro
1/2 cup Lime Juice
Quick Recipe 2 Bags
2 bags Avocado
1 & 1/2 tbsp Kosher Salt
4 tsp Garlic Powder
2/3 cup Diced Red Onion
1/3 cup Chopped Cilantro
1/3 cup Lime Juice

1 bag Avocado
3/4 tbsp Kosher Salt
2 tsp Garlic Powder
1/3 cup Diced Red Onion
1/8 cup Chopped Cilantro
1/8 cup Lime Juice

Open 3 Bags of Avocado
Using a bag opener, open 3 bags of Avocado Pulp and put it into a large mixing bowl.
Make sure to use the bag scraper to remove all the Avocado Pulp from the bag.
Mash the Avocado Pulp
Using the Masher, thoroughly mash the Avocado Pulp, eliminating any large chunks.
Kosher Salt
Add 2 & 1/2 tbsp of Kosher Salt
Garlic Powder
Add 2 tbsp of Garlic Powder
Diced Red Onion
Add 1 cup Diced Red Onion
The Diced Red Onions should be prepped the same day the Guacamole is being prepped, or it will shorten the shelf life of the final product to match the use by date of the onions.
Chopped Cilantro
Add 1/2 cup Chopped Cilantro
The Chopped Cilantro should be prepped the same day as the Guacamole is being prepped, or it will shorten the shelf life of the final product.
Lime Juice
Add 1/2 cup Lime Juice
Fold the Guacamole
Using a spatula, gently fold the ingredients together.
Pan Up
Using a gloved hand and the spatula, split the finished Guacamole into two 1/6 4" pans.
When panning up the Guacamole, add it to the pans slowly in layers to insure it is tightly packed to eliminate air bubbles. Doing this will help to keep the Guacamole from getiing brown spots internally.
Add Water
Cover the top of the Guacamole with cold water, approximately 1/4" in depth.
Adding the water will help to insure the Guacamole does not brown on the top while waiting to use it on the front line.
The water is to be removed prior to putting the Guacamole on the front line.
DO NOT MIX THE WATER INTO THE GUACAMOLE.
Label & Date
Place a prep label on the side of the pan and cover with plastic wrap and/or a plastic lid.
Store in the walk-in cooler, or reach-in cooler under the front line.
When storing, remember to practice FIFO.
