Using vinyl gloves, line a silk screen with parchment paper and lay out the desired amount of bacon.
Place the silk screen on the peel and place the screen in the speed oven. Use the SIDES>BACON STRIPS setting to cook.
After cooking, use the peel to remove the silk screen from the oven. Allow the bacon to cool for approximately 5 minutes.
Once cooled, use vinyl gloved hands to place the bacon into a 1/6 pan.
Using vinyl gloved hands, break up the bacon into small bits.
Place the pan of bacon in the hot table with a 2 oz. solid spoodle for serving. The portion is a level scoop (0.5) oz's.
