Preheat
Start by preheating the fryer to 350°.
Set Up
While the fryer is heating up, gather needed items.
Frozen Potatoes
Fry Basket
1/6 pan
Temp the Oil
Using an infrared thermometer. Verify the temp of the fryer is 350° prior cooking chips.
Placing Corn Tortillas
Place the desired amount of frozen dice potatoes in the fryer basket.
Time to Fry
Carefully lower the fry basket into the oil.
Fry the potatoes for 4 Minutes.
Shake the basket after 30 seconds to separate the potatoes. And again every minute during the fry cycle.
Drain the Oil
Once the timer goes off, raise the fry basket from the oil and allow the product to sit for 30 seconds to drain off any excess oil.
Pan Up
Place cooked diced potatoes in a s/s 1/6 pan.
Place on Line
Place the pan of diced potatoes in the hot table for serving.
Serving utensil is a rice spoon.
Hold Time: 1 hour in hot table.
