Diced Jalapeno
Options
When Dicing Jalapenos you have three dicing options. You can use the Dynacube, a chefs knife or a rocker knife.
Option 1
Dynacube
This is our preferred method to save labor and to have consistency in our products.
Place the desired amount of Jalapenos in the chute of the Dynacube and dice as you would normally with the Dynacube.
Option 2
Chefs Knife
A cut glove must be worn while using a chef's knife.
Carefully dice the Jalapenos using the chefs knife, on a green cut board.
Option 3
Rocker Knife
Carefully dice the Jalapenos using the rocker knife, on a green cut board.
Pan Up
Using a gloved hand, place the finished Diced Jalapenos into the desired pan for use.
Pans should be either 1/6 pans or 1/9 pans.
Label & Date
Place a prep label on the side of the pan and cover with plastic wrap and/or a plastic lid.
Store in the walk-in cooler, or under the front line.
When storing, remember to practice FIFO.
