Step 1
Make sure the fryer is OFF and cooled down for at least 1 hour.
Remove the fryer filter and attach the drain pipe as shown above.
Step 2
Place a stock pot below the drain pipe and slowly open the drain valve.Â
Drain the oil and carefully pour it into an approved oil receptacle.
Step 3
Close the drain valve. Then add one packet, or one puck, of fryer boil out cleaner.
Step 4
Fill the fryer with enough water to cover the heating elements.
Step 5
Turn the fryer on low heat and wait for the water to boil.
If the water begins to boil too high, turn the heat off to reduce boil-over. Then turn the heat back on to boil further. This process may take 20-30 minutes.
Step 6
Use a fryer cleaning brush and/or a stainless steel scraper to clean all parts of the fryer.
Step 7
Once the fryer has been cleaned, turn the fryer off and drain the water into a stock pot.
Step 8
Pour the water from the stock pot into a sink in the back of house that has a grease trap attached to it. DO NOT DUMP WATER INTO YOUR OIL RECEPTACLE.
Step 9
Use towels to wipe down the interior of the fryer, making sure to dry it as well as possible.
Best Practice: Let the fryer sit empty after cleaning for 1 hour before adding new oil to it.
Step 10
Once the fryer has been completely dried, fill the fryer with the approved fryer oil up to the Max fill line.
Add the cleaned and dried fryer filter to the fryer. The fryer is now ready to be used again.
