The Gather
To thaw for immediate use, gather one tub of chicken with sealed plastic bags inside.
Cold Water
Position tub at a clean Prep sink. Make sure all bags are on their sides, and continuously run a pencil lead thick size stream of cold water into the bus tub.
The bottoms of the bags should be submerged in the cold water to help the thawing process.
Set a Timer 15 Mins/2hr
Check thawing every 15 minutes.
Flip bags over to speed thawing.
Do not exceed 2 hours total for this process.
Pan It Up
Once chicken is thawed, open bags and place the chicken in a full pan.
Chicken Flavor may be off due to lack of marination time.
Receiving
Place a lid on the pan. Label and date the product accordingly.
(i.e.: Chicken Open)
Label the Open Box
Store chicken in the raw loading table, or in the walk-in cooler, following F.I.F.O. procedures.
Chicken must be used within 72 hours.
