The purpose of the hot table is to keep food hot while serving. Make sure to adjust each well individually, in order to maintain the spec temperatures set by HHB.
Make sure each well in the hot table is filled with approximately 2 inches of water. Check periodically to maintain water level.
Follow the Portion Guide to make sure the appropriate utensil is with each product.
Make sure to temp all products before they are placed in the Hot Table for service.
If you are keeping backup beans in the Hot Table, make sure to cover them with metal lids to maintain freshness.
