Begin with a clean rethermalizer.
Add approximately 2 inches of water before turning on the unit.
Best Practice: Make sure that the water touches the bottom of the pans being heated.
If heating 1/6 pans, add the bars shown in the picture above for stability.
Make sure to fill all of the open spots in the well with pans, whether they have product in them, or not. This will help retain heat in the unit.
Place individual, or one large, metal or amber lid, over the food while heating.
Check the water level in the unit periodically. Make sure to refill water as needed.
