Start with a clean dish-washing area. Pictured is a 4 COMPARTMENT SINK. PRE-WASH, WASH, RINSE, SANITIZER.
ITEMS NECESSARY:
Approved Dish Soap
Towel
Green Scratch Pad
Stainless Steel Scratch Pad
DRAIN:
When filling the sink, the handle needs to be in the closed position. Fill to the drain line.
WASH:
Use the approved pump. Press once to add 1oz of dish soap to the sink. Fill with HOT water-needs to be 110-120°F water.
Fill the sink to approximately 2 inches below the top.
RINSE SINK:
Fill the Rinse Sink with HOT Water, approximately 2 inches from the top.
Water Needs to be 110-120°F.
SANITIZER SINK:
Use the approved sanitation chemical (Quaternary sanitizer pictured). Be sure to refer to proper strength. (200 – 400 PPM)
SANITIZER SINK:
Place 13 TABLETS of the Quaternary sanitizer in the empty sink. Adjust if needed for your store’s sink size and refer to bottle for specifics. 1 to 1.5 tablets per gallon.
SANITIZER SINK:
Crush tablets so the solution dissolves faster.
*DO NOT USE HOT WATER*
SANITIZER SINK:
Fill Rinse Sink with water. Fill to approximately 2 inches below the top. Water should be room temp-Needs to be 70-90°F.
SANITIZER SINK:
Do NOT use Sani water until all the bubbles (cloudiness) have disappeared and the water is clear.
SANITIZER SINK:
Test Sani water by using supplied test strips. Submerge strip into water and hold for 10 seconds.
SANITIZER SINK:
Compare test strip to PPM scale.
Verify 200 to 400 PPM. (Green)
Begin to wash dishes. Utilize PRE-WASH sink to spray off as much food debris as possible. DO NOT stack dirty dishes in Pre-Wash sink.
Be sure to remove all the labels.
When washing be sure to clean entire dish including the outside.
Use green scratch or stainless steel scrub pad if necessary. Fully submerge in rinse sink after wash.
Fully submerge dish in Sani sink after rinsing off all soap. Dish needs to be submerged for at least 60 Seconds.
DRYING DISHES:
Place dishes in a manner so that they will AIR DRY. DO NOT stack wet dishes on top of each other. This will cause bacteria to grow and is called WETNESTING.
