Employees must wash hands and put gloves on prior to working with any ready to eat foods.
Order Matters
Be sure to add the following ingredients in order.
Break up Rice Clumps
Starting with a clean large mixing bowl and a fresh perforated serving spoon.
Use the spoon to break up any clumps of rice prior to adding any ingredients so the rice is easier to mix.
Add Oil
Add 1/4 cup of canola oil and mix the rice thoroughly by gently folding the rice over and over.
Add Lime, Lemon, & Kosher Salt
Add 1/2 cup Lime Juice
Add 1/4 cup Lemon Juice
Add 1 tbsp Kosher Salt
Mix thoroughly by gently folding the rice over and over.
Pan it up
Carefully pour the rice back into the 1/3 pan by using the two hand funnel technique.

Mixed Rice
Rice can be placed on the front line for serving.
(max serve time is 1 hour)
Keep the rice spoon in the pan and use it to serve the rice until the next pan is mixed.
