Chopped Cilantro
Options
When Chopping Cilantro you have two options. You can use a chefs knife or a rocker knife.
Clean it up
Remove any large stems or wilted leaves from the Cilantro
Option 1
Chefs Knife
A cut gloves must be worn while using a chef's knife.
Carefully chop the Cilantro using the chefs knife, on a green cut board.
Option 2
Rocker Knife
Carefully chop the Cilantro using the rocker knife, on a green cut board.
Pan Up
Using a gloved hand, place the finished Chopped Cilantro into the desired pan for use.
Pans should be either 1/6 pans or 1/9 pans.
Label & Date
Place a prep label on the side of the pan and cover with plastic wrap and/or a plastic lid.
Store in the walk-in cooler, or under the front line.
When storing, remember to practice FIFO.
