Sweet Crepes with Strawberry Sauce

Sweet Crepes

Ingredients

2 Large eggs

3/4 cup milk

1/2 cup water

1 cup flour

2 1/2 Tablespoons sugar

1 teaspoon vanilla extract

3 Tablespoons butter, melted

Extra butter for pan, if desired

Directions

1. Combine all ingredients in a blender and pulse about 10 seconds. Let batter rest in refrigerator for an hour to let air bubbles subside and have less trouble with tearing during cooking.

 2.Use a crepe pan or a small non-stick pan. Heat pan and add butter (if desired) to coat. Gently stir batter (it might separate slightly while sitting in fridge). Pour about 1/4 cup of batter into pan and swirl around to spread evenly. 

 3. Cook about 30 sec. and flip to other side. Cook other side about 10 secs or until golden. 

 4. Lay crepes out flat to cool (I lay them out on a large baking sheet).

 5.Continue to make crepes until all the batter is gone. 

 6. Once all crepes are cooled, they can be stacked and extras can be stored in the refrigerator.

Makes about 8-10 crepes

Notes: I've doubled this recipe many times and it still comes out great. We're a family of 6 and we usually eat 2-3 crepes each. We love them!

Also, this batter can be stored in the refrigerator for up to 48 hours. Sometimes, I make this batter at night to have on hand for breakfast the next morning.

Strawberry Sauce

Ingredients

1 cup granulated sugar

2 Tablespoons corn starch

3/4 cup water

1 1/2 cups fresh or frozen berries (if using large fresh strawberries, slice them)

2 Tablespoons butter

Directions

1. Cook sugar, cornstarch, and water over medium heat until boiling and thick.

2. Add berries and butter. Stir until well blended. Cook until berries are soft. When I use whole berries I like to "mush" them up and stir them into the sauce.

Makes about 2 cups

Notes: I usually double this sauce, too. It is amazing! It's also great on pancakes, waffles and ice cream. Store extra sauce in the refrigerator.

*Don't forget the whipped cream and fresh strawberries for garnish. You can cut the strawberries into hearts for Valentine's Day or just because to make it special. :) Enjoy!
