Applesauce Muffins

Ingredients

1 cup butter, softened

2 cups sugar

2 eggs

1 teaspoon vanilla extract

2 cups applesauce

4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1 cup golden raisins

cinnamon-sugar, optional

Directions

In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine the flour, baking soda and spice; stir into creamed mixture. Fold in raisins.

Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees F. for 20-25 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Sprinkle or dip muffin tops with cinnamon-sugar if desired.

Makes 2 dozen
