Mate tea has a unique sweet, musky, grassy taste that is a bit milder than the green tea. What is also amazing about mate is that it is a stimulant just like all the other caffeinated teas, but you don’t get the side effects of the caffeine. What is achieved with this particular mixture of spices is a lovely, complex taste.
Yields:
6 Servings
Ingredients:
½ of a star anise star
10 whole cloves
2 cinnamon sticks
6 whole white peppercorns
1 opened cardamom pod
1 tsp ground ginger
3 cups water
2 heaping tbsp mate tea
3 cups almond milk
Sweetener to taste
Methods of Preparation:
1. Pour the water in a pan.
2. Turn the heat up and wait till the water boils.
3. Add the spices and let it steep for 10 minutes.
4. Add the almond milk to the water and again bring to a rolling boil.
5. Remove from the heat.
6. Add the tea.
7. Let steep for another 10 minutes.
8. Add the sweetener.
9. Strain the tea using cheesecloth.
10. Serve immediately.
