Turkey Taco Skillet
What you need:
- 1 lb. ground turkey
- 1 pkg. taco seasoning
- 2 1/4 cups water
- 1 jar (16 oz.) thick and chunky salsa
- 1 can (11 oz.) Mexican corn (the kind with bell peppers)
- 2 cups instant brown rice
- Shredded cheese
- Cilantro, chopped
- Green onions, chopped
- Sour cream
- Romaine lettuce, shredded
- Roma tomatoes, diced
Directions:
- In a large skillet, brown and crumble turkey over medium heat.
- Add seasoning mix, water, salsa, and corn. Stir and bring to a boil.
- Stir in rice and simmer for 5 minutes.
- Cover and turn off the heat. Let stand for 15 to 20 minutes until most of the liquid is absorbed and rice is done.
- Serve topped with cheese, cilantro, green onions, sour cream, lettuce, and tomatoes.
