Butterscotch Pecan Pie

What you need:

    • 1 ready-made pie crust (or your favorite homemade pie crust)
    • 3 large eggs
    • 1 cup brown sugar
    • 1 cup light corn syrup
    • 1 tsp. vanilla extract
    • 1/4 cup butter, melted
    • 1 1/2 cups halved pecans
    • 1 cup butterscotch chips
    • Whipped cream (optional)

Directions:

  1. Situate the pie crust in a deep-dish 9" pie dish.
  2. In a large bowl, whisk together all of the remaining ingredients, reserving the pecans and the butterscotch chips.
  3. Add the pecans and the butterscotch chips, stir in with a spoon or spatula.
  4. Pour the mixture into the pie crust, be sure to scrap the bowl with a rubber spatula.
  5. Bake at 375 degrees for 60 to 70 minutes or until middle is set. Start checking around 45 minutes. If the crust is getting too browned, cover loosely with aluminum foil.
  6. Let cool completely before serving with whipped cream, if desired.
