Pepperjack Chicken
What you need:
- Boneless skinless chicken breasts (I believe I did 6)
- 6 to 8 slices of Pepperjack cheese
- 1 can cream of chicken soup
- 1/4 cup milk
- 1 box Stove Top chicken stuffing (I want to try this recipe with the cornbread and savory herbs stuffings too!)
- 1/4 cup unsalted butter (half a stick), melted
Directions:
- Spray a 9x13-inch casserole dish with nonstick cooking spray.
- Place chicken breasts into the bottom of the dish.
- Top with slices of Pepperjack cheese.
- In a small bowl, combine cream of chicken soup with milk. Pour over cheese slices.
- Top with stuffing - the original recipe calls for half the bag, but you can do more, if you want.
- Drizzle melted butter over the top.
- Cook in a preheated-350 degree oven for 45 to 60 minutes or until chicken is cooked through.
- Serve over rice or pasta - we chose egg noodles and chopped our chicken up.
