Pepperjack Chicken

What you need:

    • Boneless skinless chicken breasts (I believe I did 6)
    • 6 to 8 slices of Pepperjack cheese
    • 1 can cream of chicken soup
    • 1/4 cup milk
    • 1 box Stove Top chicken stuffing (I want to try this recipe with the cornbread and savory herbs stuffings too!)
    • 1/4 cup unsalted butter (half a stick), melted

Directions:

    1. Spray a 9x13-inch casserole dish with nonstick cooking spray.
    2. Place chicken breasts into the bottom of the dish.
    3. Top with slices of Pepperjack cheese.
    4. In a small bowl, combine cream of chicken soup with milk. Pour over cheese slices.
    5. Top with stuffing - the original recipe calls for half the bag, but you can do more, if you want.
    6. Drizzle melted butter over the top.
    7. Cook in a preheated-350 degree oven for 45 to 60 minutes or until chicken is cooked through.
    8. Serve over rice or pasta - we chose egg noodles and chopped our chicken up.
