Easy Chicken Fajita Bake
What you need:
- 3 to 4 boneless, skinless chicken breasts, sliced into strips
- 1 to 2 tsp. taco seasoning
- 1 green bell pepper, deseeded and thinly sliced
- 1 red bell pepper, deseeded and thinly sliced
- 1 red onion, peeled and thinly sliced
- 1 to 2 Tbsp. olive oil
- Shredded cheddar or Mexican blend cheese
- Brown rice, cooked --or-- tortillas for serving
Directions:
- In a large 9x13-inch pan, place down strips of chicken in a single layer and sprinkle with taco seasoning.
- Top with peppers and onion evenly over the top. Drizzle with olive oil.
- Then top with cheese to your liking.
- Bake in a preheated-375 degree oven for 35 to 45 minutes or until chicken is cooked through completely.
- Serve over rice or in a tortilla.
