Easy Chicken Fajita Bake

What you need:

    • 3 to 4 boneless, skinless chicken breasts, sliced into strips
    • 1 to 2 tsp. taco seasoning
    • 1 green bell pepper, deseeded and thinly sliced
    • 1 red bell pepper, deseeded and thinly sliced
    • 1 red onion, peeled and thinly sliced
    • 1 to 2 Tbsp. olive oil
    • Shredded cheddar or Mexican blend cheese
    • Brown rice, cooked --or-- tortillas for serving

Directions:

    1. In a large 9x13-inch pan, place down strips of chicken in a single layer and sprinkle with taco seasoning.
    2. Top with peppers and onion evenly over the top. Drizzle with olive oil.
    3. Then top with cheese to your liking.
    4. Bake in a preheated-375 degree oven for 35 to 45 minutes or until chicken is cooked through completely.
    5. Serve over rice or in a tortilla.
