Beef Fajita Nachos 2

What you need:

    • 1 lb. ground beef
    • 1 packet fajita seasoning mix
    • 1 small yellow onion, diced
    • 1 green bell pepper, seeded and diced
    • 1 red bell pepper, seeded and diced
    • Olive oil
    • Tortilla chips
    • 8 oz. shredded Colby jack cheese (or more, if desired)
    • Optional toppings: Sour cream, sliced jalapenos, salsa, guacamole, pico de gallo

Directions:

    1. In a large skillet, heat 1 Tbsp. oil over medium to medium-high heat. Saute bell peppers and onion until tender.
    2. Meanwhile, brown and crumble ground beef in a large skillet over medium-high heat. Add fajita seasoning and a little water; reduce heat to low and simmer for about 5 minutes.
    3. Arrange tortilla chips on a large baking sheet and top with cheese. Place under a broiler until cheese has melted.
    4. Top with ground beef, veggies, and optional toppings. Serve immediately.
