Peach Dumplings

What you need:

    • 2 fresh peaches --or-- 16 frozen peach slices
    • 2 cans (8 oz.) crescent rolls
    • 1 cup unsalted butter
    • 1 1/2 cups sugar
    • 1 1/2 tsp. vanilla extract
    • 1 can (12 oz.) Mountain Dew
    • Ground cinnamon, to taste
    • Ice cream for serving

Directions:

    1. Prepare a casserole dish with nonstick cooking spray - I used my 9x13".
    2. Peel peaches, remove the pit, and slice into 8 slices each --or-- get your 16 slices of frozen peaches out. See why I want to go the frozen route next time?!
    3. Take one crescent triangle and place a slice of peach on the wide end and roll up. Place in casserole dish, seam-side down. Repeat with remaining triangles and peaches.
    4. Melt butter in a saucepan over low heat.
    5. Add sugar and vanilla and stir to combine - the sugar does not need to dissolve completely.
    6. Pour the buttery sugar mixture over the rolls in the casserole dish.
    7. Crack open your can of Mountain Dew and poor it over the top of the rolls.
    8. Sprinkle the top with cinnamon to your liking.
    9. Bake at 350* for 40 minutes or until golden brown.
    10. Serve with a scoop of ice cream or two - the syrup at the bottom of the pan is great for drizzling over the top.
