Pineapple Pico de Gallo

What you need:

    • 1 lime, juiced
    • 1 cup fresh pineapple, diced (I used precut fresh pineapple to save time)
    • 1 cup grape tomatoes, halved
    • 1 small yellow onion, diced
    • 1/2 cup cilantro, chopped
    • 1 jalapeno, seeded and diced
    • Salt and pepper, to taste

Directions:

    1. Combine all ingredients together and refrigerate for 1 hour to let flavors meld together.
    2. Serve up on chips, with pork or chicken for a meal, OR stay tuned for the chipotle chicken & cheese quesadilla recipe coming tomorrow! I will update with a link as soon as it goes live.
