Tortilla Crisps

These are some fun, tasty little tortilla crisps that go great with a margarita, Mexican beer or sangria. They're easy to throw together and are a nice change from tortilla chips.

You will need...

several corn tortillas, cut in half

Seasoning mix...

3 tablespoons of grated parmesan cheese

1 teaspoon dried, crushed rosemary

1/4 teaspoon crushed red pepper flakes

3/4 teaspoon fresh ground black pepper

1/2 teaspoon kosher salt

Combine the seasoning ingredients in a small bowl and set aside.

Preheat the oven to 275 degrees

Spray a baking sheet with nonstick cooking spray and lay the cut tortillas in a single layer on the pan. Spray the tortillas lightly and then place in the preheated oven. Bake for 30 minutes.

Remove the pan from the oven and let cool. They will crisp up as the cool down. You can make these ahead of time and store in a sealed container of ziploc bag until ready to serve.

To serve, sprinkle each crisp with some of the seasoning mix and place in the microwave. Heat for about 10-20 seconds, just enough to soften the cheese a little. Serve warm.
