Cinnamon Bread

Ingredients:
¼ cup oil
1 cup sugar
1 egg
1 cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
½ teaspoon salt
¼ cup sugar
1 tablespoon cinnamon
Instructions:
Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray.
In a medium bowl, whisk together the oil, sugar, egg, and buttermilk. In a separate bowl, whisk together the baking soda, salt and flour. Stir the flour mixture into the wet ingredients, mixing thoroughly, and then pour 1 cup of the batter into the prepared pan.
Combine the sugar and cinnamon in a small bowl. Sprinkle half the sugar mixture (2 ½ tablespoons) over the batter in the pan; pour remaining batter over that and then sprinkle the remaining sugar mixture over the batter.
Using a knife, swirl the cinnamon sugar through batter. Bake approximately 1 hour, or until a knife inserted in center comes out clean. Cool 10 minutes, then remove from pans and place on wire rack. Slice bread when completely cooled.
