This isn't a recipe as much as it is a template for you to create your own burrito bowl. This works great for a group or a crowd, as you can just put out the condiments and let everyone assemble their own burrito bowls. I've also included my recipes for Mexican rice, and quick pinto beans (or, of course, you could use black beans). Serve with tortilla chips.
cooked, shredded chicken
grated cheese (I like to use a combination of jack and cheddar)
sliced avocado or guacamole
beans (here's my recipe for Quick Mexican pinto beans )
For each bowl, start with a layer of Mexican rice, then top with the beans, then some grated cheese, top that with some chicken, shredded lettuce, salsa, sour cream and then top the whole thing with either sliced avocado or guacamole and another sprinkling of grated cheese. Serve with tortilla chips.
