Betty's Oatmeal Chocolate Chip Cookies

These are Aunt Betty's famous oatmeal cookies and a family favorite. We've been making them since the 60's! You can personalize them by leaving out the nuts or adding raisins along with the chocolate chips which is what I do.

1 cup butter, softened to room temperature

¾ cup sugar

¾ cup brown sugar

2 eggs

2 cups quick oats

1 ½ cups flour

1 tsp baking soda

1 tsp salt

vanilla

1 cup of chocolate chips

1 cup of raisins

1/2 cup chopped nuts

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or spray with nonstick cooking spray.

In a medium bowl whisk together the flour, baking soda and salt. In a larger bowl, cream the butter, vanilla and sugars together until smooth and then beat in the eggs. Stir the flour mixture into the butter mixture along with the rolled oats. Stir in the chocolate chips, raisins and nuts (if using).

Drop by tablespoons onto prepared baking sheets and bake for 10-11 minutes. The edges of the cookies should be just starting to turn golden.

Remove cookies to a wire rack to cool. Let the cookie sheets cool back to room temperature before cooking subsequent batches.
