Fresh Fig Jam

1 lb fresh figs, diced

between 3/4 and 1 cup sugar

1 1/2 tablespoons lemon juice

2 tablespoons balsamic vinegar (or more)

pinch salt

Place the figs, salt and sugar in a heavy, small-ish saucepan and bring to a simmer. Cook, stirring occasionally for 15 minutes. Use a hand blender to blend, leaving some pieces of fig. Cook for another 20-30 minutes or until thickened. Stir in the lemon juice and balsamic vinegar. Continue to simmer until thickened like jam. Let cool and refrigerate.
