Photograph is preferred in formal contexts.

Photo may be used informally, such as in credit lines and departments.

For 360 images, a degree symbol or use of the word "degree" isn't necessary. 

For composite images, it's preferred to disclose that technique in the caption or credit. Also specify the number of photos/images (or "multiple") that were used to create the composite:

    mosaic of 14 images 

    panorama composed of six images

    composite from multiple images

Avoid using photographs that have been staged.

Do not alter reality on the finished image, except when it is done for instructional purpose, and then tell the reader what was done and why.

If wildlife is photographed in captivity, acknowledge this in the legend:

            Corals were placed in trays under a pier, shielded from daylight.  Most were later returned to the deep.
