4 premade flatbreads or pizza crusts
3/4 cup fat-free mozzarella cheese
4 oz deli ham, thinly sliced into ribbons
1 bunch fresh asparagus, trimmed and chopped into 1–2" pieces
4 eggs
1 scallion, chopped
2 tbsp fresh parsley, chopped
Olive oil spray
Kosher salt and black pepper, to taste
Everything bagel seasoning (optional)
Step 1: Preheat Oven
Preheat your oven to 425°F (218°C).
Step 2: Prepare Asparagus
Trim and chop the asparagus into 1–2" pieces. Place them in a bowl with 1/4 cup of water, cover with plastic wrap, and microwave for 5 minutes to steam.
Step 3: Assemble Flatbreads
Place flatbreads on a baking sheet and lightly spray with olive oil. Evenly sprinkle the mozzarella cheese over each flatbread. Distribute the steamed asparagus and sliced ham on top. Sprinkle the chopped scallion and parsley over the toppings.
Step 4: Add Eggs
Create small wells in the toppings of each flatbread. Crack an egg into each well. Season with everything bagel seasoning or simply with salt and pepper.
Step 5: Bake
