1.5 lbs chicken thighs, sliced
1/3 cup basil pesto (store-bought or homemade)
1 jar sun-dried tomatoes, sliced
1 package fresh tortellini, cooked according to package directions
1 bunch asparagus, ends trimmed and cut into 1.5-inch pieces
1 pint cherry tomatoes, halved
Fresh Parmesan cheese for serving (optional)
Cook the Chicken
In a large pan over medium heat, add a few tablespoons of olive oil. Add the sliced chicken thighs and half of the sun-dried tomatoes. Season with salt and pepper. Cook, stirring occasionally, for about 10 minutes until the chicken is cooked through. Stir in the basil pesto, then remove the chicken mixture from the pan and set aside.
