Ingredients:
2 large eggs
2 tablespoons finely minced red onion
1 teaspoon finely minced green chili (jalapeño or other spicy chili)
¼ teaspoon ground turmeric
½ teaspoon kosher salt

⅓ cup milk or water
2 slices of firm bread (such as sourdough, multigrain, or whole wheat)
½ teaspoon oil for cooking each slice

Instructions:
In a wide bowl (large enough to fit a bread slice), whisk together the finely minced red onion, green chili, ground turmeric, kosher salt, chopped cilantro, and milk until well combined.
Add the eggs to the mixture and whisk for about a minute until the mixture is uniform.
Dip one slice of bread into the egg mixture, gently pressing down with a fork to help the bread absorb the mixture. Flip the bread over and repeat on the other side, ensuring it's well-coated but not overly soaked.
