ENTRY REQUIREMENTS
A pass at National 5 HFT is highly recommended.
This course can also be taken with a Nat 5 Biology or Nat 5 Practical Cooking.
COURSE DESCRIPTION
This course aims to further develop learners’ knowledge of food science, with a specific focus on nutrition and dietary needs. In preparing learners for life, the Course anticipates their future needs in that it enables them to make informed dietary choices by understanding the relationships between food, health, and nutrition.
Candidates develop knowledge and understanding of the functional properties of ingredients in food and their use in developing new food products. They will consider technological developments in food and organisations which protect consumer interests.
Candidates will develop an understanding of the stages involved in developing food products and, through a problem-solving approach, produce a food product to meet specified needs.
Assessment
There are two assessment components:
an assignment (working to a brief to develop a food product) and a question paper. The assignment makes up 50% of the marks and the exam paper the remaining 50%. Both the assignment and the written paper are externally marked.
WHAT WILL MY HOME COMMITMENT BE FOR THIS COURSE?
Pupils must arrive in class prepared to participate. This will include:
· Bringing an appropriate container to transport food home safely during the ‘understanding ingredients’ unit.
· A means of tying hair back if longer than jaw-length.
· A variety of homework will be given in order to consolidate learning. Pupils will be expected to undertake relevant reading, revision and practice skills at home.
