Diana’s Awfully Southern Cheesy Squash Casserole
One family recipe didn't need much adapting. It's a southern recipe made as long as I can remember. If it had an author, no one remembers. That said, there are no measurements (SCDers will understand). - comfort food - so here goes:
Southern Squash Casserole
Chop yellow squash and onion (I did about 5 med-lg squash to 1 onion) Boil in water til soft. (or steam it)
Drain the excess water Mix in a bowl with egg (Oh, I'm guessing about 4),
Legal mayo -about 3/4 cup? Maybe? Or more?
Then lots of shredded cheddar cheese. I mean, lots. Like, it ain't southern if it ain't cheesy. Ya know?
Bake. Eat. Eat again. Don’t let your kids know how good it is, they will eat it all.
