4 Egg Whites
2 Egg Yolks
1/2 C Blanched almond flour
dash of salt
1 tsp butter (optional)
1 tsp honey (optional)
Directions
Before starting the process, turn your oven on to 350 and line a large cookie sheet with parchment paper.
Beat egg whites until stiff, adding salt partway through beating. Beat egg yolks, honey and butter (if using) together for about 30 seconds. Sprinkle almond flour onto egg whites, pour egg yolk mixture on and gently stir until all is mixed together well.
Spoon the mixture into 9 even "blobs" onto the parchment paper lined cookie sheet. Spread the blobs out to about 4 - 5" across and 3/4" thick. Think hamburger bun size. (If you have very large eggs, you'll have some left over - just bake it in a couple of custard or tart dishes that are well greased.)
Bake at 350 for 10 minutes or until slightly browning on top. Remove from oven and remove from parchment paper within a minute to cooling rack.
